You pack shoes; I pack food.
For the ten short weeks I'm spending in Kannapolis, I drove down with a bag of quinoa, my jar of vegemite, and packets of black sesame soup mix amongst other things. And so the experimenting begins with my limited resources, starting with quinoa.
And I've realized it's just not a very pretty food item. Or maybe I just suck. (It's the latter).
Quinoa... carbonara?
To a pan of cooked quinoa, I slowly stirred in a seasoned egg mixture (eggs, sesame oil, soy sauce) and sun dried tomatoes, which was previously attempted with spaghetti and roasted red peppers [the pictures of which were lost on the Macbook at the hands of my brother along with other forgottens]. It reminds of Floam (as seen on TV..). Throwing on caramelized onions and green beans didn't really help the aesthetics. I tried.
Quinoa...risotto?
With green beans and roasted garlic... and roasted chicken thighs. Tip: store brand veggie stock from a carton is not my favorite thing. Came out a little watery because I got impatient and didn't feel like waiting for it to simmer any longer, so that failed.
Quinoa..."fried rice"?
Closer to a success because broccoli and Chinese sausage are a happy marriage (such a Chinese thing to say, right?). Bowls of this can be eaten without all the guilt of consuming mounds of rice. Tip: cook quinoa beforehand and mix in sauteed meats/veggies to avoid getting seeds everywhere.

By far my favorite. Caprese salad. Tomatoes, mozzarella, fresh basil, balsamic, red pepper flakes - all you need in life.
