When Michaela first moved in with me, I tapped Kyle to help me figure out what her favorite dessert is so that I could make it for her birthday. He came back to me with lemon meringue pie. And I royally fucked it up. Because I was out of corn starch and I tried to sub in tapioca starch.
So this year, I will redeem myself in cake form.

LEMON EXPLOSION
Molly Yeh's funfetti cake sans funfetti and extracts.
Filled with lemon curd via Sally.
Covered in lavender Swiss meringue buttercream. Decorated with buttercream lemons that look like a wallpaper pattern.
Topped with toasted lemon meringue via Sally and candied lemons.


By the way, leftover lemon meringue is great toasted on fresh fay elberta peaches.

By the by the way, had to get a laptop tray/breakfast-/lunch-/dinner-in-bed tray so that I can stop dropping bites of food on my sheets *shrug emoji* and it is probably the most useful wfh item.
Early dinner-in-bed meal was the last of my frozen lobster ravioli dressed up with frozen peas, dill from my awkward dill plant that's still hanging on to life, za'atar, olive oil, and a squeeze of, what else, lemons.
