I try not to work too hard on the weekends. Weekends are for sleeping in, grocery shopping, maybe a trip to the mall (taking Sunny out for a spin), little errands, casual gymming, and sitting in a coffee shop for a couple of hours with the intention of doing work, but never actually getting around to it.
It's necessary because I'm not even sure what I'm doing but I'm doing something that's keeping me running around campus all day on week days.
Last Saturday, I left home with $3 in my pocket and the intention of getting carrots for carrot cake. Turns out there was a special event at the market, and I got wrapped up in collecting flyers and stickers and samples (and a Children's book from Organic Valley).
Carrot cake became an unintentionally all Sunday project. I love my new box grater by the way. Thanks for the raisins Audrey. Canned pineapple was more expensive at CAPS than at Target. I still don't know how to decorate cakes properly.
And Amelia made two (luckily fixable) blunders along the way.

I used recipes from both Laura's Sweet Spot and Sally's Baking Addiction because Laura included all the fixings I like, and Sally used Greek yogurt, which I need to use up. I mean, I really could have just used Sally's and added in the additional raisins and pineapple, but I also didn't have enoough brown sugar, so we'll just say I used both recipes.
The first problem, which I realized about 3 minutes after sticking the batter in the oven... was that I forgot the three eggs. How does that even happen? But at least that was an easy-ish fix. It involved quickly scooping the batter out of the pans and hoping it didn't already set too much. Phew.
The second problem, I didn't notice until I finally took a bite of the finished and frosted product. I added about 1/2c more sugar than I intended to. Math is hard. Luckily, you might be thinking the same thing my roommates were thinking - that's not a problem. So I know someone will eat it. I could barely get through one piece before I felt like I was shaking, but that's what hot tea is for.
