The motive was July 4th, but it was really just a good excuse to buy some berries and refashion them into something sugary and buttery and ooey gooey. The Teeter had cartons of strawberries 2/$6, but I feel like they always do. It took me no more than five minutes to core all the strawberries I needed with this random curved paring knife we happen to have (what?).
Adapted from here, except I didn't strain the juice. And I added a splash of balsamic to the berry reduction. And a splash of vanilla to the batter. And I extended the baking time a bit because my ceramic dish is smaller than a skillet.
Out of the oven with about 20 mins of cooling time, the strawberries were awfully sour and definitely had to be complemented with a bite of the super sweet cake-y part. But after a day of chilling on the kitchen table, the entire thing was balanced and perfect. Baby brother and I slowly ate away at it, one or two bites at a time. This one lasted about three days because Dad wasn't home to eat it all for breakfast.

I love the bright red of strawberry desserts. Less intense than cherries and more cheerful than blueberries.
