If it's not burritos or pasta, it's pizza. One of those glorious foods that knows no bounds when it comes to what you put on it (or in it). The only thing I need to learn is how to make pizza dough from scratch. The only downside to college is being away from my beloved kitchen :(
We made pizza two separate times: at Trey's and at Nancy's.
Since I'm not always into traditional stuff, I refused to use tomato sauce, so I spent a day googling (wow, there's no red line under that word... it's a real word?) Caribbean flavors.
It all starts with a fruity barbecue sauce:

Boiled down tomato sauce and brown sugar with pineapple rum, sauteed onions, garlic, and (the kicker) habanero peppers. The sauce turned out to be fucking spicy because we definitely cooked in the flavor of the habaneros, but it was super delicious.
Toppings include a blend of 6 Italian cheeses (yes, I realize that's not very Caribbean), roasted red peppers, carmelized onions, scallions, mango chunks, and pineapples to tie the sauce together.

Carmelizing onions is fun.
1. Sauteed for a bit in olive oil
2. Add white wine and brown sugar
3. Cook down

Trey made two with his store-bought thin crusts.
Pretty much the same toppings as mine plus mushrooms. He used a tomato sauce and plain mozzarella cheese.
Reminds me of Italy... but then the mushrooms turned brown after baking.
The girls made giant rectangular pizzas at Nancy's.
You can't tell but it's half barbecue sauce and half tomato sauce. Topped with ham, spinach, and some sort of pizza cheese blend (did you know they sold that? I didn't). Lydia put some pieces of habanero on her pieces, and thats the orange thing you see in the middle.
Mine was kind of out there, and pretty skeptical to the others (seriously though, fruit and cheese goes so well together if you do it right). Using the leftover flatbread and cheese from Trey's, I made a spinach and cheese pizza with apples (and of course habanero pieces). There isn't any sauce because I was too lazy to make some.
