twenty three

Life sustaining toast to get me through five hours of ceramics where I finally attempted to put handles on things.

Second exception to the no eating out rule for David's birthday at Delage. Rewriting my last memory with these dishes:
amuse
crystal bread with smoked salmon, wasabi cream, bamboo charcoal tuile

first
sake tataki salad with pickled red onion, black garlic caviar, red onion pearls, shiro goma dressing, take sumi cracker

second
unagi; avocado sakura lotus root wrapped in bamboo leaves

third
amberjack, scallop, skipjack, tuna

palate cleanser
plum, yuzu foam

fourth
gindara katsu of black cod with miso white sauce, chili oil, shiso oil, katsu sauce

fifth
chirashi duo
spicy fish, SEAGRAPES; uni, ikura, something smokey and nice

sixth
barracuda, sea bass, king mackerel, toro

seventh
yasai umami broth with yuzu zest and arare

eighth
amazake pudding with fruit, kuromitsu, pomegranate tuile
