I called this week a wash because almost nothing happened and what did happen didn't work. So I reserved myself a Friday evening to faceplant into brioche dough.
But first the unveiling of my nuo mi fan dome from yesterday.
She's... beautiful?
She doesn't need to be because she's delicious.
She needed some chili, but I couldn't open the chili crisp on the communal sauce shelf... and the sriracha was all the way in the lab fridge *melting face emoji*.
I left early because I was falling asleep standing up and because I needed the extra hours to make donuts.
Same dishes, different dishes.
During the first rise, I whipped up a quick dinner of green beans in fermented tofu sauce via Mandy with shrimp stock instead of lamb and topped with chives and sesame. Oh my god this sauce, let me tell you. She is a genius.
The main event was spread over four hours during which I caught up to Righteous Gemstones, went for a walk around the neighborhood, and ate another bowl of rice with beans (and punishingly spicy slaw).
And tried this non alcoholic beer that was actually pretty refreshing.
My eyes are still stinging from the fry oil smoke hanging in the air but these are my best batch by far.
So fluffy and airy that I wasn't even sure I was eating anything even after I ate two donuts and two donut holes.
We have variations~~
Brioche donut with li hing mui glaze (1c powder sugar, 1T li hing mui powder, 2T water).
A portion was sandwiched with pineapple jam and those scraps were kneaded and rolled out again for a vague pineapple dough.
