more macncheese masterpiece

If I had a cake shop, I would offer congratulatory cakes in two forms. For romantic celebrations.
And for achievement celebrations:


The last time I assembled a mac and cheese cake, Krissy rocked the MCAT, so it was only fitting to make another for her first acceptance into a med school.
This one is for fall.
Gouda, gruyere, cheddar, and peas mac n cheese cake rounds. 
Filled with acorn squash puree and sauteed kale with chili.
Sugarless ermine frosting with white cheddar mac n cheese packet.
In case you already suspected, it's even better microwaved even if the frosting doesn't exactly hold up.

And I had enough leftovers to make a risotto that turned into a congee.
Caramelized onions. Acorn squash puree with cheesy ermine frosting. Kale. Mushrooms. More cheesy ermine frosting. Grated parm. Accidental deluge of red chili flakes.
