day 2

VEGGIES.
I thought this day would be easy, given I was a vegetarian for two years.
And then I remembered that during those years my diet quadrupled in carbs and dairy.
So because I didn't want to just eat raw vegetables all day, nor could I sandwich them between two hearty slices of artisan bread... and forget about sauteing anything in oil and butter, I spent the entire day agonizing over what I could use as a binder for cauliflower pizza crust whilst taking pretty pictures of baby mutant arabadopsis plants at work.

So dinner went like this:
boiled and mashed up a head of cauliflower
boiled carrots with the intention of making a puree as the "sauce"
found a can of tomatoes
decided to mash up carrots with cauliflower, hoping it would help the whole thing stick
blended it up a bit with juices from jar of artichokes and water
spread on sheet pan and broiled
cooked tomatoes with herbs, spread on "crust"
topped with spinach and artichokes, broiled to wilt leaves

 ate with a fork because the lack of eggs and cheese in the crust = can't really slice and pick up
so I guess I can't call this a pizza...
but I have no idea what else to call it
because it really resembles nothing else I've eaten or heard of...
oh well, it was super filling
