economy shopping

I probably don't need to tell anyone a bag of Brussels sprouts from Costco lasts roughly half a lifetime.

If you wanted an economical way to eat for one, might I suggest breaking out the food processor and shaving the entire bag of sprouts as meal prep for the week. Research some for a raw salad.
With an avocado based dressing for instance with garlic, brown mustard, apricot jam, ACV, mint, and olive oil ... aka random shit I managed to find in my fridge at the time.
Put it in a taco with a pan seared swai filet you found in your freezer box.
Put it in more tacos (because you happened to get corn tortillas from Costco as well) with scrambled eggs and leftover veggies.

Broil the rest of your mountain of shaved sprouts to char (and also extend its shelf life a teensy bit).
Salt n pepper it and throw it in some more tacos with butter fried chanterelles.
Oops don't forget the manchego cheese from the GIANT block you also got at Costco.

It was a very regular week for me.
