Today was a full work day of playing with milk and coffee foams. With some frustration with uploading videos for good measure. Trying to assign language to flavors and aromas to keep the brain on its toes. And a quick lunch of odds and ends whey toast with pate.
It was so gloomy and rainy and windy and cold that time which is already irrelevant somehow became even more irrelevant. Is it dinner? 7? 9? Past midnight? I don't know; it's so dark out there. This is why I just don't deny my stomach anything any time it wants.
Are you hungry for dinner? Is it only 4pm? Dinner it is.
Pork fat toasted rice with TJ's super seed and ancient grain mix + garlicky bok choy + Chinese sausage.

Tomorrow for breakfast, I plan to have odds and ends jar contents... I'll obviously let you know how that goes.
The end of this "day" saw the reveal of the sake cured salmon from a week ago. This is my favorite part: seeing the water colored flesh, smelling the sake, peeling away the wilted fennel fronds, rinsing it clean, and trying to carefully slice thin, intact pieces (to roll into rosettes), while eating many odds and ends slices to truly make sure it's done.
