An ode to summer corn needs to be matched with an ode to summer tomatoes.
My new apartment location means I end up at the farmer's market more regularly now. And at this time of year, it means I'm constantly buying tomatoes apparently.
The first batch of little tomatoes was well timed with a quick and easy planning dinner with M&M and Hetty McKinnon's viral dumpling salad recipe. Fresh tomatoes and many many herbs get dressed in black vinegar, soy sauce, and chili and tossed with whatever kind of dumpling you have on hand. With a sprinkling of sesame ginger crunch for good measure.
I invited a vegan friend to a bbq, and then I felt like I should make something vegan to give some options. Enter: Frankie's cashew scallion mac n cheese with vesuvio pasta shapes. Plus added corn of course.
The other side was a gingery slaw. Heavy heavy heavy on the ginger. And all of that got repurposed into a couple meals of smoked pork shoulder sammies with provolone and spicy corn cheese toast.
Big baby heirloom and saved it to enjoy fresh and raw on toast.
On homemade milk bread with a generous layer of miso butter.
Sprinkling of sea salt and scallions, a few drops of chili oil.
Perfect.
Complemented with corn and fava salad with lots of herbs.
And dressed in homemade lacto carrot sauce.
