Two things I can always count on finding in the house: nut mixes and dried fruit. Trail mixes galore. Chocolate covered variations also a staple. To the point where 3/4 finished bags of nuts strewn about and hidden in shelves is almost triggering. I try not to buy more than 2 varieties at a time because I know very well it's going to take me forever to get through it all and I'm never going to throw it out because dried fruit is dried fruit and nuts can be roasted. So of course one of the cookies was going to have to feature nuts and fruits. And what combination is more holiday-esque than cranberries and pistachios (and orange). Also as a teenager, I used to absolutely destroy Costco bags of dried cranberries - just mindlessly devour them in front of the TV until my teeth hurt from the sugar and acidity. These days my weakness is dried apricots.
And lol that the pistachios I used as my base are seasoned and spiced so these cookies ended up sweet and savory.
I also found a few bottles of olive oil, opened and unopened, so I took the Kirkland brand one that was still within date to make these olive oil sugar cookies, sans butter. I spent a good hour to hour and a half to hand grind a 1/2c of pistachios in a mortar and pestle while binging Bojack Horseman because we don't have a processor at home. Then added some chopped up cranberries and the zest of the least dried up orange from the fruit bowl.
After chilling in the fridge overnight, I was readying myself to hand cut some hexagon shapes out of the dough when I came across the spring loaded mooncake molds I've never seen in use at home.
And they worked wonderfully! Look so cute. And my favorite thing about this mooncake mold set is that they say random fruits. 水蜜桃 - juicy peach.
Held up pretty well (in that it barely spread out) to my surprise for an olive oil cookie.
The savory spiced background worked pretty okay in the cookie as a whole. I liked that it turned out to be super orange-y. Even without the orange glaze I was too lazy to make.
