pantry cookie #2


This unopened box of cheddar bay biscuit mix was only a couple months out of date too. I used one pack to make the biscuits as the box instructions intended... and then the wheels started turning. Could I... turn this into a savory cookie??


The flour mix is basically just flavored self-rising flour - I figured it just needed butter and an egg, so with a second pack, I mixed up:
1 stick butter
1/2c grated cheddar
1 egg
1 1/3 c red lobster biscuit mix (premixed with the enclosed seasoning pack)
Top with more cheddar and bake at 350F for 15-20min.

All done by fork by the way because there's no hand mixer at home. It's oddly calming to do while binge watching Ted Lasso
Well, whatever they did really works... for biscuits. The 'cookies' didn't spread much even after I flattened them a bit. Maybe I should've skipped 1/3c of the biscuit mix. And they were more soft, fluffy, and tender, melt-in-your-mouth buttery vs what I was envisioning - chewy, gooey, and cheesy. Perhaps I needed more cheese.
All in all - not a cookie (or rather, not the cookie I intended because where are the limits to what a cookie really is?), but not a failure because I will always have a soft spot for Red Lobster biscuits.
