I learned a lot of things in quarantine. From giant social justice things to personal life direction things to general fun facts. How to do a pull up. How to make my sewing machine function (actually properly sewing an item is a different store). How to build a fire with a s'mores scented candle and egg cartons.
But the most important thing I learned is to add cheese to fried rice.
We can call this cheesy Peking duck carnitas fried rice.
I crisped up some leftover duck and bok choy in my reserved duck fat, threw in some day old rice with ground toasted rice, frozen peas... and slices of cheddar for melty salty globs of happiness. With a dollop of spiced plum jam from Athena's neighbor and a little pile of chili oil as my condiments.
Greasy and oily with crispy edges. I couldn't inhale this fast enough.
