I need easy meals. Quick and hearty meals. Can eat in bed while watching ATLA and LOK on repeat meals. I tried starting three different recommended new shows today and had no attention span for any of it. I think I'm running in place a little bit. My mind is quite literally on the other side of the world.
These one-cast-iron-pan potatoes are fried with kimchi and peas. And a healthy sprinkling of ranch seasoning. Topped with roughly ripped sprigs of cilantro.
I did cheat a bit though and boiled the potatoes the night before.
By the way, sparkling mixed berry and coconut water is randomly delicious. I found the remainder of the packet of coconut cream powder we used this past weekend for camp pina coladas and added one scoop of it + half a scoop mixed berry flavoring to water and gave it two farts of CO2 (as Jennie puts it). This carbonator is the best thing in my apt right now.
Last two quick-meal-of-potatoes-and-stuff was inspired by the bottom of a snack bag. The crumbs that I usually tip straight into my mouth, spilling half of it down the front of my shirt if I'm lucky. This is generally why I shouldn't eat in bed, but I do it anyways now. But if you want to be just a little bit civilized, dump your salted egg fish skin crumbs onto a pile of potatoes.
Fried potatoes that have been dressed in a sauce of coconut cream + salt egg yolk + peas + fish sauce + chili oil and a good handful of cilantro.
Can we talk about how good this would be as loaded fries? With like a salted egg mayo. Or maybe a baked potato with salted egg sour cream.
Last night's dinner brought to you by Christy and her extra cheese and salamis. This fennel pollen sausage. Wow. Seriously. With apple walnut cheese that wasn't distinctly appley or walnuty, but maybe that's because I paired it with the sweetest nearly overripe peaches and chimichurri mix from Santiago. And saltines because I'm classy.
But mostly because I also had saltines leftover from camping.
