emergency stash

For some reason, it always takes me a sec to get my shit together after a trip. Recovery days from vacations are a real and necessary thing. Centering myself in my day to day routines again. Including grocery shopping. I almost never grocery shop within two days of coming back from a trip, and I can confidently say that I definitely never grocery shop the day I get back. I sort of just open and close my near-empty fridge, wondering what collection of sauces I can throw on what pantry item to make what near-acceptable meal until I get my hands on a fresh vegetable. A healthy freezer stash is key for this kind of thing.
Freezer jerk dumps with carrot pickles with a side of fried spam that has been topped with melted cheddar and furikake. And Joyce's mom's soy braised potatoes and sweet red bean rice cakes. Made for a very random but very satisfying dinner on our first day back from Seattle.


I had no excuse to not stock up my fridge for a good 1.5 weeks, but I somehow made it through with a bag of chrysanthemum greens. Depleted my freezer stash. Subsisted on a lot of bready/dessert/rice items. Ordered out once.
Needless to say, I broke down and bought an excess of snacks at Costco.
Including a bag of flaming hot cheetohs after salivating over the thought of flaming hot cheetoh mac n cheese.
A cocktail + reading hour* turned into Amelia making impromptu corn cheese after fantasizing about corn cheese in every form for literal weeks.
This weird and funky love child of my many cravings was put together as follows:
-garlic + pickled jalepenos + miso paste + walnut meal toasted in oil
-pan deglazed with oat milk
-one can of drained corn mixed in and simmered to thicken
-gouda cheese grated on top
-fresh parsley ripped and sprinkled over top of that
-handfuls of FHC crumbled over top of that
-served with sichuan chili oil, the fluffiest homemade potato roll, and Costco rotisserie chicken

*blueberry wine + triple sec + cognac = yet another sangria proxy
not pictured = basil chocolate chip ice cream from Mr. and Mrs. Miscellaneous with syruped cherries.
