my fall friend in spring

We learned about Heath's seconds one day. And then I found myself with two new bowls (when I wanted six) and a plate. And damn if they don't make everything look professional as shit.

Although I'll admit this bowl is not best suited to this Imperfect acorn squash. But that doesn't diminish my love for these and all beautiful bowls. Is this kinda like wanting socks for Christmas? Getting old for sure. As a quick side note, I had a nightmare where this bowl cracked into four pieces, and I was devastated.
So back to this roasted half an acorn squash that had been slowly turning from green to orange on our developing cookbook shelf. Parts of California eating kind of make me roll my eyes... but there are many parts that I easily bought into. Because it's kind of easy. Like eating local. And with the seasons. Pretending like I can keep plant babies alive... starting with potted basil for about $3 at TJ's. It lives at work where the sun always shines. Anyways, I finally got around to baking the orange acorn squash. Here in springtime.
With leftover Easter ham, leftover cotija cheese, sunflower seeds, and basil from my beautiful basil baby.
Versus the more fall appropriate sausage and squash stuffing stuffed squash.

Just throwing this in here because this is what I craved again... but I had no sausages on hand. But why is stuffing just a fall thing?

The other half of my roasted spring squash went into a red curry with peppers, green beans, and carrots.
And this paste which will be my gateway into all curry pastes. With a can of coconut milk, a scoop of tamarind paste, and some dashes of fish sauce. Thank you Serious Eats for teaching me how to shop for curry paste... I mean, looking for the "Made in Thailand" seems obvious, but I guess reading it planted the seed for buying a (admittedly too big) jar of curry paste.
Could use some extra spicy red curry with rice to flush out my sinuses right now. Pretty sure all I heard were the adults from Peanuts whenever someone spoke to me. The one thing I can't do lying down is cook ... can I fix that?
