research



We started with zero proof cocktails.
would recommend ziiwiskaagamin * sour [aronia berry, sumac, blackberry, raspberry, agave, balsam fir]
somehow oginii-waabigwan * rose [rosehip, strawberry, lavender, agave, rosewater, pink peppercorn] tasted like pasta sauce though

potted duck [preserved duck, purple sweet potato, balsam fir, rosehip, corn flatbread]
like a yummy terrine-ish thing where the potatoes are the fat - i love all things corn and crispy

bison tartare [cheyenne river bison, duck egg sumac aioli, turnip crisps, wasna, aronia, popcorn, teosinte cracker]
maybe my favorite app, maybe the best tartare i've had in awhile, so clean, and the popcorn such a nice touch - i love all things teosinte and crispy

native heirloom corn tacos: antelope [prickly pear, pickled onion, fried sage] and rabbit [parsnip slaw, cranberry, rosehip sauce]
the antelope was the winner of the evening but i think in combination with the thicker tortilla, it was still a bit dry - would benefit from more of that prickly pear sauce

roast sweet potato [indigenous chili crisp, scallion]
holy shit this was the winner of the night, so simple, but the char was perfect, the chili was so perfectly spicy and so flavorful - we asked if they sold it, but they do not :(

grilled forest mushrooms [pepita 'cream', pickled leek]
also simple, you can't really go wrong with mushrooms and leeks and the pepita cream added something fragrant and interesting but..

i would say if you were going to get one mushroom dish get this one...
chochoyotes * mushrooms [masa dumplings, smoked mushrooms, black tepary, amaranth, chili]
was so happy to have more chili and it was a different profile than the sweet potato chili, the beans underneath the mushrooms were heaven, the masa dumps were brownie bites of goodness - i love all things corn really

maple sarsaparilla [sugar maple leaf, sarsaparilla, apple, cinnamon, linden flower]
mostly cinnamon-y but warm and good for my overstuffed tummy

walnut 'cream' and berry parfait
wish it had more berry than walnut but it was like a clean acai bowl and i was ladling it up like soup

wild rice and chocolate cake with agave caramel and aronia sorbet
loved it mostly for the sorbet, the texture of the cake was still so dense and luxurious for a gluten free dairy free cake, just a tad too sweet for me
