Currently working on a peach upside down cake of sorts. That has failed three times, so we took a little detour to this peach cobbler with cornmeal biscuits.
Mmm juicy.
cardamom and cornmeal cobbler
for cobbler filling:
5-6 peaches, wedged
juice from half a lemon
1/4c sugar
1T cornstarch
~1/4t cardamom
~1/8t nutmeg
pinch salt
-gently fold everything together
-bake ~10min at 350F without topping
for biscuits:
2c flour
1T baking powder
1T sugar
1t salt
2T cornmeal
6T butter
3/4c buttermilk
-whisk together flour, baking powder, sugar, salt, cornmeal
-cut in butter
-mix in buttermilk, adding a bit more if needed, until dough comes together
-flatten and fold three times
-cut into desired shape and nestle over warm filling
-(optional) brush with cream and top with sugar + cornmeal
-bake 12min at 400F
Eaten with a blobby blob of toasted meringue.
