shredded white cheddar
-take many liberties with musubi glaze if you please i.e. using hojicha syrup + soy
-mix cooked sushi rice with Asian pickle vinegar (reserved from carrots pickled in rice vinegar, sugar, salt, garlic) and furikake
-assemble musubi with layer of shredded cheese in between ham and rice
The layer of cheese was fantastic. Like a thin layer of mayo in a sammich, it added subtle creaminess and the illusion that I am a genius.The drive from Oakland to Seattle was unproblematic. Minus the unexpected (but probably expected) wait/fee to enter Crater Lake and the maskless patrons of a coffee-shop-that-looked-like-a-bowling-alley-slash-event-space in Redding.
But the true reason to start driving up at 5am was to make it to Sparrow Bakery in Bend for this giant cardamom ocean roll. My favorite part is the visible bits of cardamom pods.
And while we're there, might as well get fried chicken sandwiches and super crispy hushpuppies from The Tin Pig. And some raspberry lemonade ciders from the adjoining bar. This is vacation !!!!!
It turns out that several pumps of hand sanitizer is also handy for washing the honey from your hands after eating this Sweet T.
The last time I had hushpuppies was no less than three years ago at Julep in Madison right before I left. I was just about to muse about whether we think it's still open after the start of pandemic season. And then I remembered Wisconsin thinks stay at home orders is unconstitutional or whatever. And then I finally googled and I guess it actually shut down the year I left Madison.
Well, in memoriam of this fluffy hushpuppy.
Reminder to self to never take shit from someone who proudly exclaims "My son doesn't see color" and then makes a point of breaking down where all the non white families in the predominantly white neighborhood are.
