Deep and dramatic sigh of relief.
I woke up just absolutely paralyzed by nerves. So my solution to this was to drink the leftover dalgona experiments from yesterday.
Sound logic.
I managed to get down two of Joyce's black sesame madeleines and one piece of chili crisp bun. This is truly the only emotion that prevents me from eating.
It took until around 4pm to work off the nerves.
This is a story of daring faith.
The lasagna seed was planted when I packed away the massive amount of leftover ravioli filling from this time. Well it ended up going into sliders instead of lasagna, but Joyce's spicy pork marinade still waited patiently in the bottom drawer for me to circle back to it. Then Samin's #thebiglasagna swept across Instagram, watering the seed. Followed by Joyce giving me a batch of yogurt whey, nurturing the seed. And I needed to get milk for work, fertilizing the seed. Bringing home a kabocha squash and playing around with some pasta dough (2/3c Capay mills + 2/3c flour + 1 egg + 1/8c purple cabbage water) was what sprouted the seed. Emily's Asha credit ultimately brought the seedling to light.
I assembled two thick layers of lasagna before realizing I should've laid out longer pasta sheets on the bottom to be able to encase all of the filling in a snuggly pocket.
So I found a round aluminum pan, laid out the pasta sheets, flipped the two layers of contents in the glass pan into the aluminum pan without spilling, and inverted it all back into the glass pan for aesthetics.
Aaaaaaaaand she sticks the transfer!
Unlike my face, I can fix these blemishes with a lot of shredded cheese.
The entire thing was baked at 350F for an hour until the cheese blistered and bubbled.
And topped with fresh ricotta and cilantro oil.

So to recap.
This is a four-cheese (mozz, gruyere cheddar, parm, homemade ricotta) + roasted kabocha squash + spicy marinade tomato sauce (with onion and fennel) lasagna/calzone/pizza pie love child.
Look at that lift into the light. This slice literally looks like it's on fire.

Notes for next time: more mozz in the layers - I wanna see that cheese streeeeetch, brush pasta with butter and top with more shredded cheese please - I want the top to be crispy as fuck, use deeper dish.
