Apparently we are at the crazy divide. If you've made it this far without going crazy, you probably won't now. Not sure if I believe 40 days is long enough to really know or to ensure your mental state won't deteriorate...but I might be on the verge of needing a break from bread.

Gasp, I know.
I need a culinary vegetable.
Gonna get side tracked a bit to talk about this vinegar baby that I strained today. Apple scraps + molasses wild fermented until it smelled like alcohol --> strained for solids --> incubated with pineapple vinegar mother that was a happy accident from last year.
The only thing I ate today that wasn't cake scraps was a single egg scrambled with scallions, topped with a pile of caviar, and washed down with a glass of Chiravann's strawberry rosemary kombucha.
Eaten while sunning on the porch.
In between assembling a mini Milk Bar esque cake for Jennie's v v belated birthday.
Funfetti vanilla cake with almond buttercream and makeshift crumbs of cake scraps + frosting + sprinkles + crumbled meringue.
While also making little cream puffs for Viridian-inspired fika with Joyce with Dini as my guide.
From left to right we have filled puffs, slightly undercooked unfilled puffs, unfilled smushed craquelin puffs.
Going to have to troubleshoot sizing and thickness of craquelin disks because they pretty much crushed the poor puffs.
But these naked Thai tea mascarpone filled puffs will do for now.
One of the last places we managed to pop into before quarantine was Viridian in Oakland.
Where we were all flabbergasted that none of us thought to make chili garlic milk buns before.
Where I had a tomato water cocktail that looked like ice water, smelled sweet and herbal and savory, and tasted surprisingly full and refreshing.
Where we also had a Thai tea tiramisu with peanut wafer brittle thing that we also couldn't believe we didn't think to make before.
Now is the time to start recreating experiences.
Close enough, yeah?
Close enough, yeah?
