Started the new year back in the Land of Enchantment. Well almost. We were technically in El Paso a day early because it was fucking cold as shit in White Sands.
Amazingly breathtaking and limitless but fucking freezing. Well, I knew deserts get cold at night, but I thought I was prepared... and then I thought I might return to Oakland without toes.
But I love them anyways. I didn't know I loved them until I shipped out east and the landscape on long drives was no longer the same.
So for David's last summer birthday BBQ, I threw summer into a cake enshrouded by some of my favorite imagery. Or my best attempt at it.
Freeze dried corn is unsurprisingly.. not easy to find. Without probably having to overpay at REI. But if you're like me and you keep canned corn mostly on hand, then dry it out in the oven, grind it up, and dry it out a little more for a perfect addition to a basic vanilla cake. Fill with summery peach and plum jams.
Use every bowl and silicon spatula to mix the best approximation of sunset colors. And apply to cake. Make accidentally lovely roses with unused frosting.
Get frustrated making black frosting and give up just before it is empty void black because the deep gray kinda fits with the pastel palette anyways.
You know what's not easy? Sizing.
